Chocolate pressing by Carlo Lennarts We visited Carlo Lennarts from the Dutch Pastry Team at Darq Maastricht to film the making of a Gâteau Opéra. During the shoot, Carlo experimented with one of our presses to shape a chocolate garnish for the pastry.
