This stylish new lifestyle hotel brings together accommodation, dining, nightlife and wellness with concepts developed by Michelin-trained Chef Maxime Chasseriaud and renowned Chef Dany Karam. Here’s what we experienced: • Paolos Pizzeria – A warm Italian restaurant with an open wood-fired pizza kitchen, serving fermented dough pizzas, white anchovy skewers, pork sausage and potato pizza, and rich squid ink pasta with king prawns. • Lobby Bar – Coffee and light bites by day, shifting into an easygoingcocktail bar at night for relaxed drinks in the heart of the hotel. • Astra Rooftopbar – Perched 28 floors up with sweeping coastal views, serving beautifully presented Japanese-inspired dishes like prawn bao toast, wagyu short rib and Glacier 51 toothfish. • Saltfire – The morning buffet where we loaded up on waffles, pancakes, fresh fruit and eggs before starting the day. • Archies Gosford – A lively family-friendly pub and sports bar perfect for casual drinks and watching the game. • Ironbark – Their steak restaurant inside Archie’s, serving elevated bistro fare including a juicy wagyu burger and dry-aged cabinet rib eye.
