Cheesy Fajita Chicken & Rice Skillet A perfect one skillet Taco Tuesday twist 🌮 Ingredients: 1 onion, sliced (divided) 1 bell pepper, sliced 1 lb chicken breast, sliced 2 cups white rice 2 cups water 2 cups chicken broth 1 (8 oz) can tomato sauce ½ can petite diced tomatoes 2 spoonfuls Knorr chicken bouillon (about 1½ tbsp — add to taste) 1 packet @Siete Foods chicken fajita or taco seasoning 1 jar cheese sauce (I used Gordo’s Homestyle) Oil for sautéing Directions: 1. Add the sliced chicken and cook until fully done. Remove everything from the skillet and set aside. 3. Toast the rice: Add a little more oil to the same skillet. Add the remaining onion and rice. Cook until fragrant and the rice starts to get lightly golden. 4. Add liquids: Stir in water, chicken broth, tomato sauce, and diced tomatoes.
Add chicken bouillon one spoonful at a time, tasting as you go. Bring to a boil, then reduce to low–medium heat. 5. Simmer: Cover and cook for about 20 minutes, or until rice is tender and liquid is absorbed. (You’ll notice the tomatoes and onions sitting on top — that’s normal!) 6. Rest & finish: Let the rice rest for 10 minutes. Stir in the cooked fajita chicken mixture. Top generously with warm cheese sauce.
