Zucchini Cheese Burger
Ingredients:
* For the Buns:
* 2 large zucchini, grated (shredded)
* 1 cup shredded mozzarella cheese
* 1 large egg
* 1 tsp garlic powder (or Italian seasoning)
* Salt and black pepper to taste
* For the Burger Assembly:
* Grilled chicken breast strips
* Lettuce leaves
* Tomato slices
* sauce/ spicy mayo
For sauce:
* 1tbsp Greek yogurt or mayo
* 1/4 tsp mustard
* 1tbsp lemon juice
* 1tbsp olive oil
* Salt & pepper
* paprika
* garlic powder
* 1tsp chopped onion
* 1 tsp chopped dill pickle
* 1tsp dill pickle water
Instructions:
1. Prep the Mixture: In a medium bowl, combine the shredded zucchini, shredded mozzarella cheese, egg, and seasonings (garlic powder, salt, pepper). Mix well until everything is evenly combined.
* Tip: If your zucchini is very watery, squeeze out the excess moisture with a paper towel or cheesecloth before mixing.
2. Shape the Buns: Line a baking sheet with unbleached parchment paper. Scoop the mixture onto the sheet and flatten it into round, burger-bun shapes. You should get about 4 buns (2 pairs) from this amount.
3. Bake: Bake in a preheated oven at 375°F for about 15–20 minutes, or until the edges are golden brown and the centers are set.
4. Assemble:
* Take one baked zucchini "bun" and spread a layer of sauce on it.
* Add a layer of fresh lettuce.
* Add slices of tomato.
* Top with the grilled chicken strips.
* Add another drizzle of sauce.
* Place the second zucchini "bun" on top to close the burger.
