There are so many school parties, end-of-year events, graduations, and activities happening right now… and I needed cookies. A LOT of cookies. So I tripled my go-to oatmeal chocolate chip cookie recipe — the one I’m known for at work, in my community, and with pretty much anyone who’s ever tried them. These cookies are thick, soft, chewy, and loaded with chocolate chips. They stay soft for days, freeze beautifully, and are perfect for making ahead when life gets busy. One of the best things I ever started doing was baking big batches and packaging them individually. My kids could grab one for lunchboxes, after-school snacks, or to take with them when heading out the door with friends. It just makes life easier. And if you’re making large batches like this, a good mixer is worth its weight in gold. My Bosch mixer handles triple batches effortlessly. If you love soft cookies and hate dry ones… these are for you. Soft & Chewy Oatmeal Chocolate Chip Cookies Ingredients • 1 cup butter, softened • 1 cup brown sugar • ½ cup granulated sugar • 1 large egg • 1 large egg yolk • 1 tablespoon vanilla extract • 2 cups all-purpose flour • 1 cup old-fashioned oats • 1 teaspoon baking soda • 1 teaspoon baking powder • ¾ teaspoon salt • 1½ cups chocolate chips Instructions 1. Preheat oven to 350°F. 2. Cream together butter, brown sugar, and granulated sugar until smooth and fluffy. 3. Add egg, egg yolk, and vanilla. Mix until combined. 4. Add flour, oats, baking soda, baking powder, and salt. Mix just until incorporated. 5. Stir in chocolate chips. 6. Scoop dough onto a baking sheet using a large cookie scoop (about 3 tablespoons each). 7. Bake for 11 minutes. The centers should still look slightly underdone for the perfect soft texture. 8.
