I don’t think it would matter if stoick knew that hiccup could avoid the blast, that’s just who stoick was. Protect no matter the chances of safety. He lost his wife once and he knew the pain of unexpectedly losing someone you love, and even though he got her back, hiccup was his son. Protecting his family was always going to be how he went out, whether we got to see it in the movies or not.
