We have a guy who comes in, brings his own tea bags and serves himself the hot water from the coffee station. Super nice, just wants to watch sports and leaves a $5 bill on the table for whichever server has the section he sits in

No that’s 100% fair. As a manager, you pay with who you ordered from. Some places don’t even allow servers access to other server or bartender’s checks
