The Candied Bacon: Crisp up the bacon bits in a skillet over medium heat(I like to generously season bacon bits with Meat Church Texas Sugar before putting in the pan to prevent burning), Once caramelized, remove the bacon on a paper towel and leave the grease in the pan. 2. The Sear: Toss the sausage coins and diced poblano into the bacon fat and a dusting of Meat Church The Gospel. Sear until the edges are beautifully browned and the poblanos have a deep char. Toss in can of drained jalapeños during the last 60 seconds just to heat through, then remove everything from the pan and set aside. 3. The Sauce: Lower the heat to medium. Sauté your onion and garlic in the remaining fat until soft. Pour in the chicken broth and heavy cream, drop in the full block of cream cheese, and season heavily with Pit Boss Cowboy Butter (I like to slowly melt my cream cheese then once it’s fully melted bring to a simmer)  4. The Tortellini Drop: Bring the sauce to a gentle simmer and dump the frozen tortellini directly into the liquid. Cover with a lid and let it cook for 5 to 6 minutes, stirring occasionally. 5. The Melt: Remove the lid, turn the heat to low, and stir your seared sausage, charred pepper mix, and 1/2 cup of the Chihuahua cheese right into the pasta until you get that epic cheese pull. 6.
