Replying to @Jada nicole Excited to share the final version of a recipe we tested together a couple weeks ago! All the details below, and a new edition of The Dinner Club is coming this week! 🍸 Poached Fish in Spicy Coconut and Tomato Sauce - 1 cup tomato puree - 3/4 cup coconut milk - 3 tbsp Thai yellow curry paste - 1 Tbsp sambal oelek - 3 cloves minced garlic - 1 inch piece ginger, minced - 6-8 Campari or cherry tomatoes, quartered - 1 lb any flaky white fish (such as sea bass, cod, halibut or tilapia) - Lime for garnish - 1/2 cup unsweetened shredded coconut - 1/4 cup sesame seeds - Salt and pepper to taste Combine the tomato puree, coconut milk, curry paste and sambal in a large skillet, and place over medium low heat. Allow it to come to a simmer, then add the garlic, ginger, and tomatoes. Cover and simmer for about 7-10 minutes, or until the tomatoes start to burst open. In the meantime, slice your fish into single-serve filets, and season generously with salt on both sides. Nestle the fish filets into the sauce and cover again. Allow to poach in the sauce for about 5 minutes, then gently flip the fish and cook for another 5 minutes or so, or until the fish easily flakes apart. While the fish cooks, make the sesame and coconut crumble. Toast the coconut and sesame seeds in a dry skillet over medium heat, and season with salt and pepper. Stir and toss them often until toasty and well browned, about 7 minutes. To serve, remove a fish filet from the sauce, and ladle additional sauce on top, then sprinkle on the sesame coconut crumble. Serve with a lime cheek on the side for an extra pop of acid. #easydinner #EasyRecipe #fish #cookwithme #weeknightdinner #DinnerIdeas
