COLD SESAME NOODLES 🍜  the perfect side for your at home takeaway night. shout out to the off menu podcast for introducing these into my life, never thought I could be so obsessed with a cold noodle dish 🫶🏼 Ingredients  Serves 3-4  3 tbsp soy sauce  2 tbsp tahini  2 tbsp peanut butter 1.5 tbsp rice wine vinegar 1.5 tbsp brown sugar  1 tbsp sesame oil  1 tsp chilli oil + extra for garnish Juice of one lime  1 tbsp sesame seeds + extra for garnish  Bunch spring onions, chopped roughly (green ends reserved for garnish) 5 cloves garlic, minced Thumb sized piece of ginger, chopped  300g noodles  1. Start by heating a frying pan on a high heat and add in your spring onions. Fry until they go slightly charred, stirring regularly. 2. After around 5 minutes, turn the heat down and add in the garlic, ginger and sesame seeds. Stir for another minute and turn off the heat. 3. Cook your noodles to packet instructions and when draining, reserve some of the water and then rinse under cold water 4. Add your spring onion mixture to a blender along with the remaining ingredients. Blend until smooth.  5. Add the sauce to your noodles along with some of the noodle water to thin out, and a little extra sesame oil. Mix everything well together, taste for seasoning and add a little salt and pepper if needed.  6. Place in the fridge for 30+ minutes to fully chill. 7.
