@helentaylorrr: disclaimer: it’s just mothers day & a treat for my lovely mum!🤣🤍 (for the carrot cake oats) you'll need: - 1 ripe banana - 1 medium carrot - 1 egg - 1tbsp honey / maple syrup - 1tsp vanilla extract - 1tsp ground cinnamon - 4-5tbsp rolled oats - 1tbsp butter (for the blackberry chia jam): - 1 cup of fresh / frozen blackberries - 1tbsp chia seeds - 1tbsp honey method: 1. begin by grating the carrot on the medium setting and place to one side. 2. in a medium sized bowl, mash the banana roughly using a fork. 3. add in the carrots, egg, honey, vanilla, cinnamon and oats and mix until thoroughly combined. 4. in a small frying pan, melt the butter on a medium heat and add the oat mixture into the pan. 5. fry as if you were scrambling eggs... 6. keep stirring around until it turns into golden clusters (about 10 minutes!). 7. meanwhile place the blackberries, honey and chia seeds in a small bowl and microwave for about 90 seconds to 2 minutes. stir throughly and set to one side. 8. begin to assemble your bowl by placing your yogurt of choice in the bowl, followed by the warm carrot cake oats on top. 9. you can now place the blackberry chia jam wherever you like…i wasn’t sure whether my mum would want the jam (she’s not really into jam!) so i kept it optional! enjoy xxx🥕🤍 #yogurtbowl #yogurt #carrotcake #breakfastideas #breakfast
