Genuine question but why not just temper all the chocolate to 31 and skip the mixing?

You can also temper chocolate with a sous vide it’s way more consistent you just have to get the right temperature and add 1% of cocoabutter (also tempered)

Quick question, do you have to learn theory whilst learning in a program? Or is this just information said once and you have to go over it in your own time to better understand the process?

I had a love hate relationship with chocolate/sugar works class....it was so much fun but if you mess up the chocolate even a little, your final product will look awful
