FAKEAWAY FRIDAYS 🍔🔥 this week we’ve got a Peri chicken parm burger with peri tomato sauce, melty mozzarella and parmesan, all piled up into a garlic buttered brioche bun. This one is absolutely banging 😮‍💨 30 minutes, high protein, and hits those takeaway cravings 🤌🏼  Ingredients (serves 2):  2 x 120g chicken breasts, butterflied
Olive oil spray
1 tsp peri-peri seasoning
½ tsp smoked paprika
½ tsp garlic granules
Salt  Black pepper
 Parm layer: 100g passata ½  tsp tomato puree 
1 tsp peri-peri sauce (optional, for heat)
1 tsp dried oregano or mixed Italian herbs
40g mozzarella, grated
10g parmesan, finely grated
 To assemble: 2 brioche buns  10g lighter butter spread  ½ tsp chopped garlic  1-2 sprigs of fresh parsley chopped 1 tbsp garlic mayo  2 handfuls of shredded lettuce  💕Season the chicken with the peri-peri seasoning, smoked paprika, garlic granules, salt and black pepper. 💕Heat a large non-stick pan over a medium-high heat, spray lightly with oil and cook the chicken for 4–5 minutes per side until cooked through. 💕Mix the passata, tomato puree, peri-peri sauce and dried herbs in a bowl.  💕Lightly toast the brioche buns until pale golden. Melt the butter with the chopped garlic in the microwave, stir through the parsley, then brush over the bun tops. Air fry at 190°C for 2 minutes until lightly crisp or grill for 1-2 minutes. 💕Once the chicken is cooked, transfer it to the air fryer basket. Spoon over the tomato sauce, top with the mozzarella and parmesan, then air fry at 190°C for 5-7 minutes until bubbling (or oven bake at 200°C / 180°C fan for 8-10 minutes). 💕Spread garlic mayo over the bun bases and top with shredded lettuce.
