someone tell me why i’ve never made my yogurt LEMON flavoured…i fear i’ll be doing this everytime now (for the lemon yogurt) you'll need: - 200-300g full fat greek yogurt - zest of 1/2 a lemon - juice of 1/4 of a lemon (a generous squeeze) - 1tbsp honey (for the coconut granola): - 1/2 cup oats - 1tbsp olive oil / butter - 2-3tbsp maple syrup / honey - a small handful of flaked coconut (optional) (to serve): - a small handful of pistachios, chopped - fresh raspberries - honey (optional) method: 1. begin by mixing your yogurt, lemon zest, lemon juice and honey in your bowl of choice until throughly combined. pop in the fridge whilst you get on with the rest. 2. in a small frying pan, add in the oats, olive oil (or butter), maple syrup (or honey) and flaked coconut. 3. stir together with a wooden spoon until the oats are evenly coated in the mixture. 4. leave to cool on a medium / low heat for 5-10 minutes, stirring continuously until the granola is golden brown. 5. gather the oats into one corner of the pan in a flat layer. press down with your spoon until flat. 6. remove from the heat and allow to cool for at least 5 minutes! 7. make a coffee whilst you wait hehe. 8. grab your lemon yogurt from the fridge and begin to break up the granola into clusters (i use the wooden spoon!). 9. spoon the granola over the yogurt. 10. top with the chopped pistachios, fresh raspberries and an extra drizzle of honey if you like it sweeter! enjoy xxx🍋 #breakfast #yogurt #yogurtbowl #lemon
