They're different - different climates make these two kinds of ham distinct. For example, Spanish ham can be eaten raw, but Jinhua ham can only be eaten cooked

There's also smoked duck aka wax duck and a huge assortment of sausages in intestine casings. They're delicacies served during Chinese new year. Chinese people have been preserving foods since BC era.
