Hot Honey Halloumi & Chicken Loaded Flatbreads This is the 20 minute dinner I cannot stop making at the minute. Juicy chicken, golden halloumi and fresh salad loaded into warm flatbreads with hot honey and a spicy mayo drizzle. SO easy to make, quick for a weeknight & absolutely banging 🤌🏼 Ingredients (serves 2): 250g chicken breast, diced 1 tsp smoked paprika 1 tsp garlic granules Salt Black pepper 60g halloumi sliced 25g honey 1 tbsp hot sauce Pinch of chilli flakes 2 flatbreads 2 handfuls of shredded lettuce 6 cherry tomatoes quartered Pickled Onions 1 small red onion sliced 100ml distilled vinegar 100ml hot water Pinch of sugar Pinch of salt Hot sauce mayo 50g lighter mayo 2 tsp hot sauce 1 tsp jalapeño juice Pinch salt 💞Make the pickled onions by combining the ingredients listed. Mix well and set aside to soften while you prepare the rest. 💞Season the chicken with smoked paprika, garlic granules, salt and pepper. Cook in a hot pan for 6-8 minutes until golden and cooked through. 💞Mix together the mayo, hot sauce, jalapeño juice and salt to taste. 💞In a separate pan, cook the halloumi slices for 2-3 minutes per side until golden. 💞Once the chicken has cooked, add the honey and hot sauce to the pan along with the chilli flakes. Stir well and cook for another 1-2 minutes until the chicken is sticky and coated. 💞Toast the flatbreads according to packet instructions. 💞Build each flatbread with a base of lettuce, tomatoes and pickled onions. Add the hot honey chicken and halloumi, then drizzle over the hot sauce mayo.
