Introducing 💙 Lactarius indigo 💙 AKA the Blue Milky Cap  While we’re known for foraging a lot of the plants in our products, we like to dabble in mushroom foraging as well when we have the time! And this odd little mushroom that bleeds vibrant blue latex when you cut into it is probably my favorite.  The fungi’s strange color not often seen in nature may make you wary of it being poisonous but it is in fact edible and delicious! A little firmer than your classic button mushrooms, these fried up beautifully to a greenish hue with a flavor that was mild and not unlike what you’d buy at the store.  A few key identifying tips to keep an eye out for: 🍄‍🟫 light blue to darker blue cap that eventually becomes convex through maturity 🍄‍🟫blue gills that attach at the stem and may begin to run down it  🍄‍🟫 bleeds blue latex when you cut the mushroom that turns green as oxidation occurs over time 🍄‍🟫 found almost exclusively under pine or oak trees on the ground from late summer to early fall. These guys have a symbiotic relationship with their respective trees and connect their mycelium to the roots!  🍄‍🟫cream colored spore print  At least in the northeastern US, every lookalike I could find was closer in color to purple and was missing the characteristic blue latex.  This all being said, NEVER MUNCH ON A HUNCH, do your research, and forage responsibly!! Leave enough for the critters to munch on because we’re far from the only species that enjoy my favorite free grocery store that is known as the outdoors.
