Caramelized pineapple and chorizo rice bowls! 😮‍💨🤌🏼 
 If you’ve been following for a while, you are no stranger to this recipe; it is one of my all-time faves.
 The recipe is actually in my first e-cookbook, but I love y’all, so I’ll share it here too. 😙 
 So stoked to be partnering with @lundbergfarms to talk about their premium quality rice. Lundberg has been a staple in my pantry for years, so I’m extra excited to work with them now! 
 I generally prefer white rice, but Lundberg organic short grain brown rice is a total game-changer. It cooks up perfectly tender and is the best base for this dish.
 Here’s how to make it! 
 Chorizo Pineapple Rice
 * 1 cup Lundberg organic short grain brown rice
 * ½ tablespoon olive oil
 * 1lb chorizo or Italian sausage or ground chicken sausage (whatever you like!)
 * 1 small sweet onion, chopped
 * 4 cloves garlic, minced
 * 2 bell peppers or 15 mini peppers, chopped/sliced
 * 1 tablespoon butter
 * 2 cups pineapple, cubed * 4 green onions, chopped 
 Creamy chipotle sauce
 * ¼ cup mayo
 * ¼ cup plain Greek yogurt
 * 1 chipotle pepper in adobo sauce + 1 tablespoon adobo sauce
 * 1 lime, juice of 
 Cook rice per the package directions. I like to use broth and a tiny pat of butter to make the rice even more glorious! 
 In a large skillet over medium heat, add olive oil and brown the chorizo or sausage until cooked through. Add the onion and sauté until softened, translucent and fragrant, about 3-5 minutes. Add the garlic for 30-60 seconds and then remove the sausage/onion mixture to a bowl. Sauté the peppers for 2-3 minutes until softened and move to the bowl. Add butter to the skillet. When it is melted and warm, add the pineapple. Allow to cook and caramelize on one side, without stirring, for about 5 minutes. Toss and allow to continue to caramelize for a few more minutes, the moisture from the pineapple will help release all the little stuck-on bits in the pan.  
 Add the chorizo, veggies and rice to the caramelized pineapple and toss to combine. Fold in the chopped green onions. Whisk together the creamy chipotle sauce.
