@dana_conway: Kiss me, I’m Irish (I’m not, but do you really wanna miss out on this opportunity)😏 Welcome back to “Single, but cooking like someone’s falling for me tonight.” Who’s hungry?👀 Chocolate Guinness cake • 380 g plain flour • 3 tsp bicarbonate of soda • 1 tsp baking powder • 1 tsp salt • 400 g caster sugar • 300 g soft light brown sugar • 4 eggs • 240 ml oil • 360 ml buttermilk • 4 tsp vanilla • 360 ml Guinness • 130 g cocoa powder Whipped Cream cheese • 280 g full-fat cream cheese • 120g icing sugar • 1½ tsp vanilla extract • pinch fine salt • 600 ml very cold double cream 1. Heat oven to 160°C fan. Line a 10-inch tin. 2. Mix all dry ingredients except cocoa powder 3. Mix all wet ingredients (except Guinness). 4. Combine wet + dry. 5. Heat the Guinness until steaming and stir in the cocoa powder and add that to the rest of the batter and whisk well 6. Pour into tin and bake 55-65 min. Cool completely. For the cream: 1. Beat cream cheese and icing sugar and vanilla until smooth and lump free. 2. Stream in the double cream whipping on high until you form medium stiff peaks. 3.
