What was the 3rd time in largest pot where the broth becomes milky color. I thought after post parboiling (1st time) then The 2nd time you were done with draining the bones with the nice clear broth . Please clarify

Do you wait until it cools down/slightly warm before put it in container? I read that let it sit in room temp for more then 2 hrs causes bacteria growth, is it true?
