morgan - there’s two different types of chocolate powder! you have cacao & said it right. it’s usually more bitter than cocoa powder since it’s unroasted/raw beans. cocoa powder (especially dutch processed) is better for baking because it has a smoother & more traditional chocolate taste. a high quality cocoa powder gives a very deep, rich chocolate flavor. however, it’s definitely personal preference and i’ve baked things with both!

The comments are shocking tbh I live in the US & ONLY bake in grams. You get a more consistent result every time you bake vs using cup measurements 🤷🏻♀️

cocoa powder and cacao are not the same; they differ primarily in processing and nutrient density. Cacao is raw, minimally processed, and fermented at lower temperatures, resulting in a bitter, nutrient-dense powder. Cocoa powder is roasted at high temperatures and often alkalized, making it milder, sweeter, and less nutritious. Cacao can be substituted for cocoa powder in recipes, but it may require more sweetener. Cacao is not ideal for recipes that require alkali, such as those needing to react with baking soda. 💕
