@clairehodginss: DILL PICKLE CHICKEN SALAD 🥒🍗😋 If you never know what to make for lunch, try meal prepping a few options at the beginning of the week! This is one of my favorites because it’s packed with protein, tastes AMAZING and will keep you full! You can eat this in a wrap, in a sandwich, with chips or for a low carb option, on a salad or with sliced veggies! This recipe makes about 2 servings :) Ingredients: - 1 cooked chicken breast (about 8 oz) - 1/4 of a red onion - 2 green onions - 2 tbsp parsley - 1/4 cup plain greek yogurt - 2 tbsp avocado oil mayo - 2 tbsp chopped pickles - 1 tbsp pickle juice - 1/4 tsp garlic powder - 1/4 tsp onion powder - 1/4 tsp salt How to: - Add cooked chicken breast to a large bowl and shred using a mixer, two forks or your hands. - Finely dice the red onion, green onion, parsley and pickles and add to the bowl. - Add greek yogurt, mayo, pickle juice and spices and mix well so that everything is combined. - Eat right away, or store it in an airtight container in the fridge for 3-4 days. Enjoy!
