So close to perfection! Try this and thank me later: add the cubed cream cheese toward the end so it softens and some “melts” into the eggs but you also get little pockets of it. HOWEVER, you must also drizzle on a little adobo sauce (from a can of chipotle peppers). The spicy-creamy combo is SO GOOD. You can also sauté diced asparagus for a minute or two before adding the eggs. I’ve been making this for years and it’s 💯
