The broccolini and bone broth make the pesto bright, creamy, and full of flavor and paired with @GOODLES protein noodles and a crispy chicken cutlet… it’s unreal. ✨ What you’ll need: • Goodles protein noodles • 1 bunch broccolini • Large handful fresh basil • 4 cloves garlic • 1/3 cup bone broth • 3–4 tbsp olive oil • Parmesan cheese (to taste) • Juice of 1/2 lemon • Salt + pepper For the chicken cutlet: • Chicken breast, thinly pounded • 1 egg (for egg wash) • Panko breadcrumbs • Parmesan cheese • Salt + pepper • Avocado oil (for frying) How to make it: 1) Bring a pot of salted water to a boil and cook the broccolini until tender. 2) Add the cooked broccolini to a blender with basil, garlic, bone broth, olive oil, Parmesan, lemon juice, and plenty of salt and pepper. Blend until smooth and creamy — your broccolini pesto is done. 🌿 3) For the chicken cutlet: dip the chicken in egg wash, then coat in panko mixed with Parmesan, salt, and pepper. 4) Fry in avocado oil for about 3 minutes per side until golden and crispy.
