My DEEP Chicken Broth Recipe Below ⤵️🍜🐔 Simple, nutritious & SUPER useful for soups, noodles & pretty much anything that needs a BIG flavour boost!!🧨 Ingredients 📝 - 2 chicken carcasses, 500g chicken necks or extra bones, olive oil, - 2 onions, 2 carrots, 3 celery stalks, 4 spring onions stems, salt, - 5 garlic cloves, 1 large piece ginger, coriander stems, 3 bay leaves, 1 tsp - peppercorns, - 4–5L water, salt, lime juice & sesame oil. Method 🧑‍🍳 1. Chop & prepare all vegetables & aromatics.  2. In a large pot, brown the chicken carcasses in olive oil until caramelised, then remove & repeat with chicken necks. 3. In residual fat juices, cook the onions, carrot & celery for around 5 minutes before adding garlic + ginger. Continue cooking on lower heat until softened, then season with salt. 4. Add coriander stems, bay leaves, peppercorns & return chicken to the pot. Cover everything with water & bring to a gentle simmer. 5. Reduce heat to low & cook uncovered for 3-4 hours, stirring occasionally, keeping the bones submerged + skimming any excess fat or impurities (if needed). Avoid aggressively boiling the broth. 6. When finished, strain the broth, discard all solids, then season generously with salt. 7. Taste & adjust with a squeeze of lime juice and a small splash of sesame oil.
