@cast_iron_chris: It’s time to ditch non-stick but doing so requires some skill and technique. The seasoning will add non-stick properties to cast iron, but eggs can still like glue to even a well seasoned pan. These are three tips to help make your cast iron non-stick (or stick less). These tips also works for carbon steel. They work for stainless steel as well but typically stainless steel needs to be hotter than cast iron (let it heat up longer) to be non-stick. It’s important to know that cast iron, carbon steel, and stainless steel will never be as non-stick as true non-stick (teflon) pans but with the proper technique you will get pretty damn close.
