Guys listen cooking food at high temperatures damages and breaks down the DNA in it. so when you look at the fried scallops being cooked in very high temperatures the DNA breaks down and DNA is hard or impossible to find.

So, if you buy the cooked scallops, and have them tested for scallop DNA , it almost will never come out as scallop DNA because the proteins were changed as they cooked

Yes, it is entirely possible to identify if a scallop is real or fake using DNA testing even after it has been cooked. In fact, DNA analysis is the primary method used by investigators and researchers to expose seafood fraud in restaurants
Heat Resistance: While high heat (like frying or roasting) can damage DNA, it is generally much more stable than proteins. Most forensic labs can still extract enough genetic material from a tiny, cooked sample—even from deep-fried or canned seafood—to identify the species.
DNA Barcoding: Scientists use a method called "DNA barcoding" that focuses on specific mitochondrial genes. Since each cell contains thousands of copies of mitochondrial DNA, there is usually plenty left to analyze after cooking.
Comparison Libraries: The extracted DNA is compared against massive global databases (like the FDA's reference library) to see if it matches a true scallop or a cheaper substitute like pollock, stingray, or spinefoot fish
