Why Korean Fried Chicken Is So Crispy (Secret Recipe). .
Korean fried chicken is famous for its crispy coating and juicy interior. The secret is a flavorful marinade and a double-fry technique that creates an incredibly crunchy crust. This easy home recipe uses garlic, soy sauce, milk, and a light flour coating to make restaurant-style Korean fried chicken legs that are golden, crispy, and packed with flavor.
 Ingredients
 For the Chicken
 • 500 g chicken legs
 • 1 tablespoon minced garlic
 • 1 teaspoon salt
 • 1/2 teaspoon five-spice powder
 • 1/2 teaspoon pepper powder
 • 1 tablespoon light soy sauce
 • 1 tablespoon oyster sauce
 • 1/2 cup milk
 For the Coating
 • 1 tablespoon flour
 • 1 tablespoon cornstarch
 • 1 egg (optional if needed)
 For Frying
 • Cooking oil (enough for deep frying)
 Making Process
 1. Use a toothpick to poke small holes all over the chicken legs so the marinade can absorb better.
 2. Place the chicken legs in a bowl. 3. Add minced garlic, salt, five-spice powder, pepper powder, light soy sauce, and oyster sauce.
 4. Pour in the milk and mix well so the chicken is fully coated.
 5. Cover and refrigerate for at least 1 hour. Longer marinating will make the chicken more
 flavorful.
 6. In another bowl mix flour and cornstarch evenly.
 7. Take the marinated chicken legs and coat them with the flour mixture. Add an egg if the
 coating needs more moisture.
 8. Heat oil in a deep pan to medium heat.
 9. Fry the chicken legs slowly until the surface becomes light golden.
 10. Remove the chicken and increase the oil temperature.
 11. Fry the chicken a second time for about 30 seconds until the coating becomes deep golden and extra crispy.
