Crispy Beef Street Corn Tacos 🌽🔥 One of our fav recipes!!! 😋 Ingredients: For the Tacos —  * 1 lb ground beef * 1 packet taco seasoning * 2–3 tbsp Mateo’s Gourmet Salsa * 1–2 tsp chipotle adobo sauce (adjust to spice preference) * Small flour tortillas * Shredded cheese For the Street Corn Topping —  * 1/2 cup low-fat cottage cheese * Splash of water (for blending) * 1 to 1 1/2 tbsp light mayo * 1 cup corn * 1–2 jalapeños, finely diced * Chopped pickled red onion * 2–3 tbsp cotija cheese * Fresh cilantro, chopped * Tajín or Everything But The Elote seasoning * Juice of 1 lime For Finishing —  * Hot honey * Extra cotija * Lime wedges Instructions: 1. Char the Corn — Heat a skillet over medium-high heat. Add the corn and cook, stirring occasionally, until lightly charred and golden in spots. Remove from heat and let cool slightly. 2. Make the Street Corn Topping — Add cottage cheese and a splash of water to a blender. Blend until smooth and creamy.
