@antonycookes: I had some rhubarb going mouldy in my fridge. I’m not one for making puddings, so wondered what protein might match well with rhubarb. My head went to lemons for a sourness substitute, imagined which cuisines use lemons a lot, and settled on Levantine lamb. I used cardamom, fennel seeds, pistachios, honey and mint to complement the rhubarb’s puddingy proclivity. #rhubarb #rackoflamb #middleeasterncuisine #levantinecuisine #Recipe
