@francescogranatagrecia: Rigatoni with artichokes & egg cream 🇬🇷🇮🇹 Ingredients for 2 portions: 4 egg yolks 80 g Pecorino Amfilochias DOP 80 g Kefalograviera Amfilochias DOP ~2 g black pepper 300 g rigatoni 3 artichokes extra virgin olive oil a knob of butter salt, to taste Method: 1. Clean and slice the artichokes, keep them in lemon water. 2. Sauté with olive oil, butter & thyme. 3. Deglaze with white wine, cook until tender. 4. Mix egg yolks + cheeses + pepper → create a cream (bain-marie). 5. Cook rigatoni. 6. Toss pasta with artichokes. 7. Off the heat, add the egg cream. 8. Mix until creamy. 9.
