Keeping the Barista Express simple 🙌  I turn the grind dial down to around four. That’s only a starting point. Different coffee will behave differently, so you may need to move it—but we’re not disappearing down that rabbit hole today. When I grind, I weigh the coffee going into the portafilter. I have 17.7 grams here, and I’ll aim for roughly twice that weight in espresso—around 35 grams out. No complicated formula. Just one simple ratio that gives me a useful target. Before brewing, I distribute the grounds and give them a firm, level tamp. I’m also using a puck screen. It’s optional, but it keeps the machine cleaner—and cleaning dried coffee from the shower screen isn’t exactly my idea of personal growth. Portafilter in. Cup on the scales. Zero the scales. Now I can brew. If the grind is right—or at least close—the pressure should move into the espresso range, and the coffee should come out in a steady, controlled stream. I want the shot to run for at least around 24 seconds. I went slightly over my target weight here, but that’s okay. The shot didn’t gush, and the espresso still looks good. Now for the milk. I briefly purge the steam wand, then get the jug into place before the steam becomes too powerful. Once you find the correct position, the milk should spin smoothly. You should hear a gentle tearing sound at the beginning, not the tortured screams of a tiny dairy ghost. At around 60 degrees, I turn the steam off and wait for it to stop completely before removing the jug. Then wipe and purge the wand. Finally, I pour whatever this particular attempt at latte art is supposed to be. It may not win any awards, but the coffee will still taste delicious.
