Einkorn is the ORIGINAL ancient grain if you look at its genetic chromosome make-up; the oldest grain known to man. Oh, how far we’ve come now with modernized wheat that’s grown to produce higher yield grain heads and shorter stalks (meaning less energy to grow but not nutrient dense) and genetically modified to withstand harmful pesticides. Modern wheat has 42 chromosomes and is genetically modified to contain a much higher gluten content, making it very difficult for the human body to digest (yes, even organic wheat too). I bought your Eden starter a while back but then I got diagnosed with pcos and I found out during that that I had also developed a gluten intolerance. Einkorn bread has been my saving grace. Will you eventually be selling einkorn starter?

No sure you remember but I bought your Eden starter a couple years back and struggled FOREVER with it because I was using Einkorn. I almost gave up but so glad I didn’t! So thankful for the text, phone conversation and encouragement you gave me in the beginning of the journey! Einkorn is SO amazing!
