For me, Sundays are synonymous with jollof rice, so I’m re-sharing what I consider a foolproof method for getting it right every time. It might look simple, but jollof is notoriously tricky to nail. Burn it and it turns bitter; overdo the liquid and the rice goes mushy. There’s a lot that can go wrong. Oven-baking isn’t traditional, but it’s the most reliable method I’ve found for consistently good results. Paired with suya—beef skewers coated in the tastiest spice mix—and fried plantain, it’s easily one of the best meals of all time!
