GANACHE: 70g chocolate leche, 40g nata, 3g café soluble, 0.5g vainilla, 5g mantequilla. Emulsionar. VASO: Congelar hielo + boquilla, bañar en chocolate y cacao, pintar con aceite. RECIPE: BISCUIT: 60g egg whites, 40g egg yolks, 50g sugar, 50g flour, 8g cornstarch, 0.5g salt. Whip egg whites, mix with beaten yolks + dry ingredients. Bake at 356°F for 10–15 min. CREMA: 70g mascarpone, 56g cream, 17g powdered sugar, 0.5g instant coffee, 1g vanilla. Mix + whip until creamy. GANACHE: 70g milk chocolate, 40g cream, 3g instant coffee, 0.5g vanilla, 5g butter.
