SALADS YOU EAT WITH CRISPS 👉🏼 CHICKEN TZATZIKI SALAD If you guys have followed me for a while, you’ll know there are a few things I’m obsessed with. My big one-bowl salads that I eat straight out of the mixing bowl, my pitas, and now my latest variation eating my salads with crisps. There’s just something about scooping up the perfect chopped bite with that salty crunch that really does it for me. This chicken tzatziki salad was basically made for it. Serves 3
Approx. 345 kcal & 37g protein per serving without crisps 1 medium cucumber 100g thick Greek yoghurt & 100g cottage cheese (or use 200g thick greek yoghurt) 2 tsp extra virgin olive oil 1 lemon 1/2 small garlic clove, finely grated 1/4 small red onion, finely diced Large handful mint, chopped Large handful dill, chopped 240g cooked chicken breast, shredded 150g drained chickpeas, dried 1 small avocado, diced Any Crisps of your choice, to serve Grate around two-thirds of the cucumber, toss with the salt and leave for 10 minutes. Tip into a clean tea towel and squeeze really well to remove as much water as possible (important!) Dice the remaining cucumber. Mix the garlic with a little squeeze of lemon juice (2 tsp max) and leave for 5 minutes to soften the raw garlic flavour. Add the yoghurt, cottage cheese, olive oil, some lemon zest, red onion, mint and dill, then season well with salt and pepper. Fold through both cucumbers, chicken, dried chickpeas and avocado. Taste and adjust the seasoning. Chill until ready to eat, then give it a really good mix before serving with your favourite crisps.  #healthyrecipes
