@thebkydpalate: Chicken Bacon Ranch Lollipops 🍗 Cowboy Butter Ranch is so good with this one, such a good combo. Recipe below ⬇️ • Ingredients: 12 pack chicken drumsticks 1-1 1/2lb bacon (normal cut) BBQ rub or seasoning of your choice Soda for spritzing BBQ Pins (I used @grillpinz) • Cowboy Butter Ranch: 1/4 cup butter (melted) 2 garlic cloves (minced) 1 tablespoon Dijon mustard Juice of 1 lemon 1 teaspoon paprika 1 teaspoon chili oil 1/2 cup mayonnaise 1/4 cup sour cream 1/4-1/2 cup buttermilk (adjust for desired consistency) 1 teaspoon garlic powder 1 teaspoon onion powder 1 tablespoon fresh dill (chopped) 1 tablespoon fresh parsley (chopped) 1 tablespoon chives Salt and black pepper to taste • Instructions: -Preheat smoker to 275°F -French drumsticks by cutting at the thin part of the bone (about the middle of the drumstick) and remove the skin, tendons, and push the remaining meat down to resemble a lollipop -Wrap with bacon and secure with grill pin. Smother in seasoning and place on the smoker for 45 min to 1hr -Make the cowboy butter ranch in the meantime by combining all the ingredients -After 45 minutes, spritz lollipops with soda every 10 minutes or so until chicken reaches an internal temp of 175°F (higher for dark meat) -Once finished, allow to rest for a couple minutes and dip into the ranch.
