Fresh Milled Blueberry Muffins (Moist + Soft) Ingredients • 1 ½ cups fresh milled hard white wheat flour • 1 tsp baking powder • ½ tsp baking soda • ½ tsp salt • ½ tsp cinnamon (optional) • ½ cup sugar OR ⅓ cup honey • 1 egg • ½ cup milk (or buttermilk) • ⅓ cup coconut oil (or melted butter) • 1 tsp vanilla • 1 cup blueberries. In a bowl, mix together the dry ingredients including the fresh milled flour, baking powder, baking soda, salt, and cinnamon. In a separate bowl, whisk the egg, sugar (or honey), milk, coconut oil, and vanilla until well combined. Pour the wet ingredients into the dry ingredients and gently mix just until combined, being careful not to overmix. Fold in the blueberries, then let the batter rest for 10–15 minutes to allow the fresh milled flour to fully hydrate. While the batter is resting, prepare the crumb topping by mixing the flour, sugar, and butter (or coconut oil) until crumbly. Fill your muffin cups about ¾ full, sprinkle the crumb topping evenly over each muffin, and bake at 375°F for 18–22 minutes, just until the tops are lightly golden and set. hello, I followed your recipe and it turned out great. I used olive oil instead and I'd add more sugar but I use my mom's marionberry syrup for extra sweetness. I will need to make 24 as I could eat 2 or 3 for breakfast.
