A quick, wholesome Mediterranean one-pot stew with chicken, chickpeas, and vegetables, packed with protein and fiber, perfect for pregnant women and the whole family. Ingredients: - 2 tbsp olive oil - 1 lb chicken breasts, diced - 1 can (15 oz) chickpeas, drained and rinsed - 1 can (14.5 oz) diced tomatoes - 2 carrots, sliced - 2 cups fresh spinach, chopped - 3 cloves garlic, minced - 1 onion, chopped - 1 tsp dried oregano - 1 tsp dried basil - 1/2 tsp paprika - Salt and pepper to taste - 4 cups low-sodium chicken broth - Whole grain bread slices (for serving) Instructions: 1. Heat olive oil in a large pot over medium heat. 2. Add diced chicken and cook until browned, about 5 minutes. 3. Add chopped onion and minced garlic, cook until translucent, about 2 minutes. 4.
