It’s a healthy meal prep breakfast idea that’s vegan, dairy-free, gluten-free, and refined sugar-free ✨
It starts with a sweet raspberry milk (made from almond milk/coconut milk, raspberries, and maple syrup). Pour it in a bowl with chia seeds, whisk together, then chill in the refrigerator overnight!
In the morning, add your favorite toppings and enjoy 😍
Ingredients 1 cup almond milk or canned coconut milk 1 cup fresh or frozen raspberries 1-2 tbsp maple syrup 1 tsp vanilla extract 1 pinch of salt ¼ cup chia seeds
Instructions 1) In a blender, combine coconut milk, raspberries, maple syrup, vanilla, and salt. Blend until smooth. 2) In a large bowl, add blueberry milk and chia seeds. Whisk together until combined. 3) Cover chia pudding and chill in the refrigerator overnight (or at least 4 hours). After, whisk together once more. If you’d like to thin the consistency, feel free to add an extra splash of milk. 4) Serve chia pudding with toppings of your choice, like fresh fruit, coconut flakes, or granola. Enjoy!
