Cajun spaghetti and meatballs is one of those dinners I make when I want something really comforting but still quick… especially on busy nights when everyone’s hungry and I need something I know they’ll love… it’s creamy, a little bit spicy and just one of those dinners that always goes down well with everyone. . Recipe serves 4 . Ingredients. 500g small meatballs (approximately) 400g spaghetti 1 onion (finely diced) 2 cloves garlic (finely grated) 1tbs tomato purée 1-2tbs Cajun seasoning 300ml chicken stock 120ml single cream Handful of fresh parsley, finely chopped. 60g cheddar or Parmesan, finely grated (optional) . Method . Pop your pasta onto boil with plenty of salt. Then fry the meatballs until they’re browned, then add in the onions. Cook until soft then add in the garlic, tomato puree and Cajun seasoning and cook for another few minutes. Add in the chicken stock and cream and cook until it’s formed a thick sauce. Then add in the parsley and cooked pasta. Sprinkle over the cheese. Serve and enjoy. . Calories- 542 Protein- 38g .
