In order for a human to “observe” something, whatever you are observing, has to interact with other particles in order for you to see it. It is that interaction not your observation that changes it.

The observer, in very confusing science language, refers to the particle used to measure the phenomenon, not the consciousness of the scientist conducting the experiment. And when you hit an infinitesimally small thing with another infinitesimally small thing, it will affect it.
