Our restaurant has a tofu Bahn Mi option, so take this advice, if you want to make tofu taste like meat, slice it up and marinate it over night. soy sauce, MSG, sugar gives it a balanced umami taste that resembles marinated chicken. then you can add ginger, garlic, onion and other flavor as you want.

Imo, this needs FAR more seasoning. Like 5 times as much. 🤣 A good amount of soy sauce and tomato paste as well, it tastes "meatier" this way I find.

Apparently if you freeze the tofu before cooking them it’ll give it a more meaty texture.
