Clean and wash the gizzards and hearts, then cut them and leave them in cold water. Keep the liver in cold water as well... later, you will cut and remove the marrow. ✨Peel the onions and remove the seeds from the peppers, then wash and cut them. Slice the onions thinly. Cut the peppers according to your preference. If you like, you can also add 2 grated carrots. ✨Place a pot on the stove and heat the oil. Add the onions, a pinch of salt, and stir well. Cook until the onions soften, then add the peppers (and carrots if using). Mix everything well and cook until the peppers (and carrots) soften. Then add the paprika and stir again. ✨Add the cleaned and washed gizzards and stir. Cover and cook for about 30 minutes, stirring occasionally. Check if the gizzards are cooked. Then add the chicken hearts. Mix well and cover again. Let cook for about 10 minutes. Then add the tomato paste and stir. Cook for another approximately 15 minutes, then add the chicken liver. ✨Mix everything well and let it simmer with the lid on. If needed, add a little water or tomato sauce (to taste... I didn't add anything—just used a non-stick pot). Finally, season with salt, pepper, and parsley.
