It could have something to do with screen quality. Back in the day, the vast majority of people used to have poor quality, low-contrast screens. Now it’s the opposite - TVs come with oversaturated defaults that very few people change after buying one. In both cases, movie producers had to compensate for that. Fun fact - the same happens on Game Boy Advance. Games had oversaturated colors to compensate for the poor GBA LCD screens. Nowadays these games look odd - the colors are way too vivid when played on emulators.
