Episode 1 of Good Soups is pork meatball and daikon soup! This is a proper Chinese homestyle soup, similar to the classic pork rib and daikon soup, but in this recipe we’re using 20% fat (essential) pork mince as they’re quicker to cook and the extra fat means more tender meat Serves 4 For the veg: 25g ginger 220g carrot 400g daikon 30g spring onions/garlic chives For the meatballs: 450g 20% pork mince 2 tbsp low sodium light soy sauce 1 tsp ground white pepper 1 tbsp white vinegar 1 tsp sea salt flakes 1 tbsp sesame oil 1 1/2 tbsp cornstarch For the soup: 1.8L water 1 tbsp miso 1 tbsp chicken bouillon powder 1/2 tsp sea salt flakes 1 tbsp low sodium light soy sauce Smash the ginger using the back of you knife, slice the carrot and daikon into small chunks. Thinly slice the spring onions, or chives if using. For the meatballs, add the sliced spring onions/chives, all the seasonings + sauces, and mix well until evenly combined. Add the smashed ginger to a large pot, lightly fry on it’s own to release aroma, then add the water and once boiling, add the carrot and daikon, simmer on medium-low heat for 30 minutes. Add 1.8L water, miso, chicken bouillon powder, sea salt and light soy sauce. Cup a portion of the meatball mix in your hand, close your first and squeeze the meatball out = this shapes it neatly and keeps it compact. Cook for 10-15 minutes, or until the meatballs are cooked. Serve with a bowl of rice and extra spring onions.
