CREAMY LEMON GARLIC PRAWN ALFREDO 🍋  Macros (serves 4)  • 574kcal  • 38g P • 55g C • 20g F Prawns • 500g raw prawns  • 1 tsp each garlic powder, onion powder, paprika, salt and ½ tsp chilli flakes • 1 tbsp parsley • 1 tbsp light butter   Pasta • 1 tbsp light butter • 1 tbsp plain flour • 6 cloves garlic minced • 1 large shallot finely diced • ½ tsp each dried oregano, salt and pepper • 1/3 cup Little Ripples white wine • 2/3 cup chicken stock • 1 cup light cooking cream • 1/3 cup grated parmesan • 1 tsp lemon zest + 2 tbsp lemon juice • 1 tbsp chopped dill + 2 tbsp chopped parsley • 250g dry pappardelle  To serve • 4 cups steamed or roasted broccolini Method 1. Season and cook the prawns: Toss prawns with garlic powder, onion powder, paprika, salt and chilli flakes. Heat a large pan over medium-high heat with a little oil. Cook the prawns in batches for 1–2 minutes per side until almost cooked and golden. Add butter and parsley, then toss until the butter has melted. Remove from pan and set aside. 2. Make the sauce: Reduce heat to medium. Add the butter to the same pan, then shallots. Cook 2–3 minutes until softened. Add the garlic, oregano, salt and pepper and cook for 30–60 seconds until fragrant. Sprinkle over the flour and stir for 1 minute to cook out the flour. 3. Pour in wine, scraping up browned bits from the bottom of pan. Simmer for 1 min until slightly reduced. Stir in the stock and cream, then simmer gently for 2-3 minutes until the sauce begins to thicken. Stir through the Parmesan until melted, then add lemon zest and juice.Taste and adjust seasoning if needed. 4. Cook the pasta: Cook pasta according to packet instructions until al dente. Reserve ½ cup of the pasta. 5. Combine: Add pasta to the sauce and toss. Gradually add a little pasta water as needed until the sauce is silky. Fold through dill and parsley, and return the prawns to the pan, gently tossing for 1 minute. 6. Serve: Garnish with extra parsley, freshly cracked pepper and serve with steamed or roasted broccolini.
