Place in a lightly oiled bowl, cover, and let rise for 1 hour, or until doubled in size. 2. Prepare the Meat Filling:Combine all meat filling ingredients in a bowl. Mix thoroughly and let marinate for at least 30 minutes (longer is better for flavor development). 3. Prepare the Spinach and Cheese Filling:Combine all spinach and cheese filling ingredients in a bowl. Mix well. 4. Assemble the Pide:Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a flat, boat-shaped oval. 5. Fill and Bake: add the filling and Fold the edges of the dough to enclose the filling. 6. Egg Wash and Sesame Seeds: Brush the tops of the pide with beaten egg and sprinkle generously with sesame seeds. 7.
