Ingredients: - 1 cup quinoa - 2 cups water or low-sodium chicken broth - 1 lb (450g) skinless, boneless chicken breasts, sliced - 1 teaspoon turmeric powder - 1 tablespoon olive oil - 1 cup baby spinach - 1 cup cherry tomatoes, halved - 1 cucumber, sliced - 1/2 cup crumbled feta cheese - For the lemon-tahini drizzle: - 2 tablespoons tahini - Juice of 1 lemon - 2 teaspoons honey (optional) - 2 tablespoons water (to thin) - Salt and pepper to taste Instructions: 1.
