Do you have a suggestion for the dairy part, I have Crohns and dairy alternatives are a struggle because of the thickeners/processing. I feel like this would be an easy mid day snack at work. I really like your content, my focus now is understanding and increasing fibres in every meal.

Flake your own oat groats. They taste so much better than store-bought bagged, rolled oats, and the beta-glucan content by weight in raw oats, 55 grams of flaked oat groats typically contain approximately 1.65 to 3.3 grams of beta-glucan

I appreciate the video's focus on beta-glucan; it is a vital metric for metabolic health. However, switching to pearl barley prepared with a pressure-cook and freeze method offers a significant, quantifiable advantage over standard oats.
Physiologically, barley contains approximately 5% to 11% beta-glucan, whereas oats typically sit between 3% and 5%. This translates to a 50% to 100% increase in the active fiber per serving without needing to supplement with additional bran. Furthermore, the high-pressure cooking and subsequent freezing process maximizes the creation of Type 3 Resistant Starch (RS3). This crystalline structure resists digestion in the small intestine, providing a 20% to 30% reduction in the available glycemic load compared to freshly cooked grains.
From a practical standpoint, this is a massive time-saver for anyone on a demanding schedule; a single 48 oz batch provides a month's worth of portions that can be grabbed and thawed instantly. By combining this fiber-dense barley with anthocyanin-rich blueberries and Greek yogurt, you are creating a breakfast that delivers a 2x increase in bile-acid-binding capacity compared to a standard bowl of oatmeal.
